Pumpkin Soup

3 tbsp

1 medium yellow onion diced

3 garlic gloves minced

3 cups chicken broth

15 oz can 100% pumpkin pure

1/2 tsp ginger

1/2 tsp rosemary

1/2 tsp nutmeg

1/2 tsp cinnamon

1/2 tsp salt

1/4 tsp pepper

1/2 tsp cumin

1/2 tsp pumpkin pie spice

1 tbsp 100% pure maple syrup

1 cup whipping cream

3 tbsp bourbon

Melt butter in a large pot on medium heat add onions, garlic cook until nice and tender

Add all remaining ingredients

Stir well and cook for one hour on low heat stirring frequently

Use a hand blender and pulse the pumpkin soup until a smooth

Serve warm or cold.

Great fall soup.
