Crab Bisque Soup

Seafood

2 cups clam juice

6 oz claw crab meat wild caught and ready to cook

Produce

1 carrot chopped

1 celery stalk chopped

A head of garlic minced

1 medium tomato chopped

Can goods

1/4 cup tomato paste

Baking and spices

1/4 tsp salt

1/4 tsp pepper

1/4 tsp dried thyme

Oils and vinegars

2 tbsp olive oil

Dairy

1/2 cup whipping cream

Beer wine liquors

1/4 cup whiskey

1/4 cup bourbon

1/2 cup sherry

Add 2 tbsp olive oil to large pot on medium heat, add all vegetable, cook until tender, stir frequently

Add 2 cups clam juice, 1/4 cup tomato paste, 1/4 cup whiskey, 1/4 cup bourbon and 1/2 cup sherry stir well

Add 1/4 tsp salt, 1/4 tsp pepper and 1/4 tsp thyme stir well

Add 1/2 cup whipping cream stir well

Add 5 oz claw crab meat, leave remaining crab for topping on soup

Cook crab bisque soup for 40 minutes on low heat

Use a hand blender and blend soup until smooth

Place soup in soup bowls add remaining crab meat and garnish with parsley

Enjoy for a nice winter evening..
